Pumpkin Torte

Pumpkin Torte


  • 1 qt. Dannon® Natural Flavors Vanilla Lowfat Yogurt
  • 2 eggs
  • 1/2 cup brown sugar
  • 1 tsp. ground ginger
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • 1 (1 lb.) can pumpkin
  • 2 cups crushed gingersnaps or graham crackers
  • 3 Tbsp. butter, melted
  • 2 Tbsp. granulated sugar
  • 2 cups mini marshmallows*



  1. Pre-heat oven to 325 degrees F.
  2. Line a strainer with a coffee filter. Spoon yogurt in strainer and place over a bowl, cover and refrigerate 6-8 hours.
  3. In a bowl combine eggs, sugar and spices and mix well. Add pumpkin and drained Dannon® Natural Flavors Vanilla Lowfat Yogurt and mix to blend thoroughly. Set aside.
  4. In a bowl combine cookie crumbs, butter and sugar. Mix well. Press mixture into the base of a 9-inch spring form pan.
  5. Pour batter into pan and bake 45-50 minutes or until set. Top cake with marshmallows, if desired, and set to cool. Cool cake completely before slicing and serving.
