Sherried Pumpkin Soup

Sherried Pumpkin Soup


  • 2 Tbsp. canola oil
  • 1 sweet onion, minced
  • 2 cloves garlic, minced
  • 1 (1 lb.) can pumpkin puree
  • 1 qt. chicken broth
  • 2 Tbsp. sherry
  • 1-1/4 cups Dannon® Plain Yogurt
  • 3 Tbsp. chopped parlsey
  • 2 Tbsp. slivered almonds, toasted


  1. In a soup pot, heat oil. Add onions and garlic and sauté 3-4 minutes. Add pumpkin puree and chicken broth and bring to a boil. Reduce heat and simmer soup 20-25 minutes. Add sherry and remove from heat.
  2. Whisk in 1 cup Dannon® Plain Yogurt and parsley. Serve each portion of soup with a dollop of remaining yogurt and a sprinkle of toasted nuts.
