Summer Corn Soup with Cilantro and Yogurt

Summer Corn Soup with Cilantro and Yogurt


  • 1 Tbsp. canola oil
  • 1 cup chopped sweet onions
  • 1/2 cup celery
  • 4 cups corn off the cob (5-6 ears)
  • 3 cups chicken stock
  • 1 cup Dannon® Plain Yogurt
  • 1 cup diced roasted red peppers
  • 2 Tbsp. chopped fresh cilantro
  • 1 tsp. hot sauce


  1. Heat oil in a soup pot, add onions and celery and sauté 3-4 minutes. Add corn and chicken stock and bring to the boil. Reduce heat and simmer 15-20 minutes.
  2. Puree soup in blender or food processor. Transfer to bowl and stir in yogurt, red pepper, cilantro and hot sauce. Adjust seasoning and serve.
